Edie Banks’s Famous Nutella Cupcakes

The heroine for Right Wrong Guy, Edie Banks, is a whiz in the kitchen. She opens up a cute, funky coffee shop in downtown Brightwater called Haute Coffee. One of her customers favorite treats is her Nutella cupcakes.

For the Chocolate Cake Base:
(makes 12 cupcakes)
·  3/4 cup plus 2 tablespoons all-purpose flour
·  2 1/2 tablespoons unsweetened cocoa powder
·  3/4 cup white sugar
·  3/4 teaspoons baking powder
·  a pinch of salt
·  3 tablespoons unsalted butter
·  1/2 cup whole milk
·  1 egg
·  1/2 cup Nutella 

For the Frosting:
(enough for 12 cupcakes)
·  2 cups confectioners' sugar
·  6 tablespoons unsalted butter
·  2 tablespoons milk
·  1/3 cup Nutella 

Preheat the oven to 350 (F)

Mix 3/4 plus 2 tablespoons flour, 2 1/2 tablespoons cocoa powder, 3/4 teaspoons baking powder, 3/4 cup sugar, pinch of salt, and 3 tablespoons butter in a freestanding electric mixer with a paddle attachment (or use a handheld electric whisk) and beat on slow speed until you get a sandy consistency and everything is combined.

Pour 1/2 cup milk into the flour mixture, beating well until all the ingredients are combined

Beat in egg

Spoon the batter into the cupcake tins and bake in the preheated oven for about 20 minutes.

When the cupcakes are cool, hollow out a small section in the center of each one and fill with a dollop of Nutella. Then frost and try not to eat the whole batch in one sitting.
