I wanted to let you know what I baked over the holidays that my family LOVED!
I made these popovers on Christmas morning, and they were gone in an instant. I baked them again a few days later at a family gathering, and everyone gobbled them up that I had to bake another batch right then and there. Nothing was left at the end of the day. Have you ever had a popover? They're light and airy and so versatile! You can eat them plain or make them into cream puffs or fill them up with something savory. We break ours open and drizzle with honey and eat them like that. The recipe I used is also gluten-free, which made my family members who need to eat gluten free very, very happy! Whether they needed to eat gluten free or not, EVERYONE at the party LOVED them. I was thrilled that they were a HUGE HIT! :)
On a side note...I'm always asked if you need a popover pan to make popovers. You certainly do not. A regular muffin pan can be used. A popover pan has taller wells, so your popovers will be taller than if you used a muffin pan. Taste should be the same. No matter which pan you use, the key is to grease the pan well so that the popovers can be easily taken out.
I used the Gluten-Free Popovers recipe from Make It & Love It. She posts really nice pictures of these popovers made in a popover pan vs. a muffin pan. If you make them, let me know how they turned out.
